Introducing Pomme D’Or – from the depths of mead cellar we are excited to unveil inaugural vintage of Pomme D’Or (French for golden apple)
A unique, one-of-a-kind, mead made with intentionally burnt honey co-fermented wild with raw heritage cider apple juice inside French oak. After alcoholic fermentation finished we fortified this bochet-cyser with a neutral spirit to 20% and aged it for one year in French oak. To finish this special mead, we further aged Pomme D’Or for an additional year in freshly emptied ex-Calvados barrels.
Bottled without fining or filtration.
